Pancake day, also called Shrove Tuesday, is celebrated in February or March in England, exactly 47 days before Easter Sunday. This simple, flourless version is a great breakfast, not only in England.
Still some brown bananas in the fruit bowl? Use them for this recipe. Together with yoghurt and blueberries, a refreshingly sweet and satisfying treat.
Children love these pancakes.
Ingredients for 2 people (approx. 10 small pancakes):
- 2 bananas
- 4 eggs
- 1 tsp cinnamon
- 1 1/2 tsp vanilla essence
- pinch of salt
- butter for baking
Blend eggs, banana chunks, cinnamon, vanilla essence and salt in a blender (or mix well with a fork).
Melt coconut oil or butter in a pan over medium heat. Pour small portions of the batter mixture into the pan (2-3 pancakes per baking round, depending on the size of the pan). Turn each after 1-2 minutes, fry until golden brown.
Our suggestion for a healthy and delicious topping:
Blueberries & Greek yoghurt & maple syrup.
